Combine cucumbers, onions, celery, and stevia to make a healthy cucumber salad.

Asian flavors meet summer veggies in this tangy and refreshing chilled cucumber salad.

Serves: 4


Ingredients:

Salad:

  • 3 medium cucumbers
  • 1/2 medium white onion, thinly sliced
  • 2 stalks celery, thinly sliced diagonally

Dressing:

  • 3 tablespoons apple cider vinegar
  • 3 tablespoons tamari, or other soy sauce
  • 1 tablespoon Dijon-style mustard
  • 1 tablespoon freshly grated ginger
  • 1/2 teaspoon coriander
  • 1/8 teaspoon white stevia powder

Directions:

  1. Peel the cucumbers, quarter them lengthwise, and thinly slice. Place them in a salad bowl along with onion and celery.
  2. Combine all of the dressing ingredients in a small bowl or glass jar and mix well. Add the dressing to the vegetables and toss well.
  3. Cover the bowl and chill in the refrigerator for at least 2 hours before serving.
