Waldorf Salad

A fresh take on Waldorf salad, this light and fluffy fruit and nut medley is both healthful and satisfying. Shredded carrot, spicy ginger and fresh-squeezed lemon juice give this salad a great depth of flavor.
Serves: 4-6
Ingredients:

7-8 red Delicious apples, unpeeled, cored, and cut into 1/2-inch cubes (about 4 cups)

1 cup raisins

1 cup coarsely chopped pecans

1 cup shredded carrot

1/4 cup plus 2 tablespoons shredded unsweetened coconut
Dressing:

1-x-1-inch piece fresh ginger

1 cup mayonnaise

1/2 cup lemon juice
-
1/8 teaspoon white stevia powder
Directions:
- Grate the ginger. Using your hands, squeeze its juice into a small bowl. Add the mayonnaise, lemon juice and stevia. Mix well.
- In a salad bowl, combine the apples, raisins, pecans, carrot and coconut. Add the dressing and toss well.
- Cover the bowl and chill in the refrigerator for several hours before serving.
Try using mayonnaise made with avocado oil for additional health benefits!
