Asian-inspired coleslaw made with red and green cabbages and sweetened with a little stevia.

Embrace the health benefits of hijiki, a highly nutritional brown seaweed, with this crunchy, Asian-inspired slaw sweetened with stevia.

Ingredients:

Slaw:

  • 1/2 cup dried hijiki
  • 1/2 medium green cabbage
  • 1/2 medium red cabbage
  • 1 medium cucumber, peeled and thinly sliced
  • 1 medium red bell pepper, thinly sliced
  • 1 tablespoon Herbamare, or sea salt
  • 1 tablespoon organic, unrefined sesame oil
  • 2 teaspoons tamari, or other soy sauce
  • 1 teaspoon sea salt
  • 1/4 cup sesame seeds for garnish (optional)

Dressing:


Directions:

  1. Soak the hijiki in cold water for 15 to 20 minutes. Squeeze out the excess water and coarsely chop.
  2. While the hijiki is soaking, finely grate the cabbage in a food processor.
  3. Combine the cabbage, hijiki, cucumber, bell pepper, Herbamare, sesame oil, tamari and salt in a large bowl and toss well.
  4. Combine all of the dressing ingredients in a small bowl or jar and mix together. Pour the dressing over the slaw and toss well.
  5. Cover the bowl and chill in the refrigerator for several hours.
  6. Garnish with sesame seeds, if desired, before serving.
