Combine carrots, pecans, raisins, coconut, and stevia to make a healthier Waldorf salad.

A fresh take on Waldorf salad, this light and fluffy fruit and nut medley is both healthful and satisfying. Shredded carrot, spicy ginger and fresh-squeezed lemon juice give this salad a great depth of flavor.

Serves: 4-6


Ingredients:

  • 7-8 red Delicious apples, unpeeled, cored, and cut into 1/2-inch cubes (about 4 cups)
  • 1 cup raisins
  • 1 cup coarsely chopped pecans
  • 1 cup shredded carrot
  • 1/4 cup plus 2 tablespoons shredded unsweetened coconut

Dressing:

  • 1-x-1-inch piece fresh ginger
  • 1 cup mayonnaise
  • 1/2 cup lemon juice
  • 1/8 teaspoon white stevia powder

Directions:

  1. Grate the ginger. Using your hands, squeeze its juice into a small bowl. Add the mayonnaise, lemon juice and stevia. Mix well.
  2. In a salad bowl, combine the apples, raisins, pecans, carrot and coconut. Add the dressing and toss well.
  3. Cover the bowl and chill in the refrigerator for several hours before serving.

Try using mayonnaise made with avocado oil for additional health benefits!
