Naturally Sweet Alternative to Sugar

Strawberry Preserves

Use stevia for this easy to make sugar-free version of strawberry preserves.

Make perfectly-ripened strawberries last all year long by preparing this simple but delicious strawberry preserves with stevia. Enjoy it as a spread on biscuits and toast, or over vanilla bean ice cream with sweet whipped cream.

Serves: Approximately 96 one-tablespoon servings


Ingredients:

  • 1 1/2 quarts fresh strawberries, hulled
  • 4 teaspoons water
  • 1 cup unsweetened frozen apple juice concentrate
  • 2 teaspoons apple pectin powder
  • 3/4 teaspoon powdered stevia extract

Directions:

  1. Prepare jars for canning.
  2. Clean and mash strawberries.
  3. Combine strawberries and water in a medium sauce pan and bring to a boil.
  4. In another small sauce pan bring fruit juice concentrate to a boil.
  5. Place hot fruit juice in blender.
  6. Add pectin powder and carefully pulse to dissolve powder.
  7. Add pectin/juice mixture to boiling strawberries.
  8. Stir vigorously 1 minute.
  9. Stir in stevia extract.
  10. Bring back to a boil and remove from heat.
  11. Fill canning jars to 1/2 inch from the top and top with lids.
  12. Set in water bath and process for 5 minutes.
  13. Remove from water and let jars cool.
