Naturally Sweet Alternative to Sugar

Sunday Morning Pancakes

Make whole wheat pancakes even healthier substituting stevia for sugar.

Nothing beats a Sunday brunch featuring fluffy pancakes. Made with wholesome ingredients and sweetened with stevia, these pancakes are both satisfying and healthy.

Ingredients:

  • 4 large eggs, room temperature
  • 1 cup whole wheat flour
  • 2 packets stevia powder
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • 2/3 cup sour cream
  • 6 tablespoons 2% low fat milk

Directions:

  1. Preheat griddle to 375° and spray with non-stick cooking spray.
  2. Separate eggs, placing yolks in small bowl and whites in large bowl.
  3. Combine dry ingredients in a medium-large bowl.
  4. In separate bowl, beat together the sour cream, milk, and egg yolks until smooth.
  5. Add vanilla.
  6. Mix wet and dry ingredients until thoroughly combined.
  7. Beat egg whites until they form soft peaks.
  8. Fold into batter.
  9. Drop by large spoonfuls (or use a 1/4 measuring cup) onto hot griddle, and flip when the surface become bubbly.
  10. Cook the other side until lightly browned.
  11. Top with fresh sliced fruit.
